About the Recipe
Egg bakes are a staple in my meal prepping routine, mainly because they're so easy, but especially when I have busy mornings! Make my savory and nutrient dense Mediterranean inspired egg bake the next time you're in a pinch and need a high protein, yet delicious meal that will keep you energized all morning long while you're busy on-the-go!
Ingredients
8 eggs (pasture-raised)
1 tbsp whole milk (I prefer Alexandre Farms brand and I opt for whole milk for it's lower lactose ratio compared to low-fat milk)
2-3 medium sized on-the-vine tomatoes, diced
1 shallot, diced
2 artichoke hearts, chopped with stems removed (I prefer canned artichokes because they're canned in water as opposed to oil when bought in glass jars)
1/4th cup shredded provolone cheese (or any white cheese will do, I prefer Organic Valley brand)
3 slices of uncured turkey bacon, diced (I prefer Apple Gate brand)
1/2 tsp garlic powder
Salt & Pepper to taste
Freshly chopped Italian flat-leaf parsley to garnish
Avocado oil spray or olive oil spray
Preparation
Step 1
Preheat oven to 400 degrees F. While the oven is preheating, cook the diced turkey bacon in a pan until fully cooked. Once bacon is finish cooking, remove it from the pan and chop up the tomatoes, shallot, and artichokes.
Step 2
In a medium size bowl, whisk the eggs with 1 tbsp whole milk. Add the shredded cheese (reserve a few pinches of cheese for the top of the egg bake), garlic powder, salt/pepper to the mixture and combine completely.
Step 3
Lightly spray a square baking dish with avocado oil or olive oil spray. Then, equally disperse the diced tomatoes, shallots, and
artichokes into the bottom of the baking dish. Then, sprinkle the cooked turkey bacon over the veggies. Lastly, pour over the egg mixture and top off the egg bake with a few pinches of shredded cheese on top.
Step 4
Bake for 25-30 minutes uncovered or until the eggs are well done in the center. You can also broil the egg bake for 1-2 minutes until the cheese is golden on top. Remove from the oven and garnish with freshly chopped parsley. Finally, cut the egg bake into 4 squares and serve hot! Enjoy!
